- Passenger41470956264 (10/5): Paradise in Umbria - This was the most beautiful little piece of paradise. The people working there were so lovely. The food was incredible. We did a cooking class, which we loved. Our kids did archery, which was so fun. Massage was amazing. Views can’t be beat.
- emU4556CX (10/5): A Place That Does Something Rare - There are hotels that are beautiful, and there are hotels that are well-run, and occasionally there are hotels that are both. Aethos Saragano is something rarer still: a place that makes you feel, for the duration of your stay, as though you have stumbled into a life (slightly) better than your own. Set within a medieval hilltop village in Umbria, the hotel is woven into its surroundings rather than imposed upon them. The architecture doesn’t announce itself. The rooms - ours a superior terrace apartment - are clean-lined and modern, all quiet surfaces and considered light, but it is the view that stops you: breathtaking in the truest sense, valleys rolling away beneath blue skies, hills stacked softly to the horizon. We had nothing but sunshine from beginning to end, and the stillness of the place made it all the more vivid - quiet in the way that is never quite silent, filled instead with birdsong shifting through the day and, as evening fell, the sound of crickets and frogs carried up from the valley below. But the physical beauty of Saragano is almost beside the point, because what distinguishes this place is the people. The young staff are kind, warm, humorous and genuinely helpful - expert without condescension, present without hovering. In the restaurant, Ceci, the wine pairing and dish guidance was genuinely impressive - the kind of knowledge worn lightly, offered generously, with real pleasure in the sharing of it. You leave these exchanges feeling fed in more ways than one. And the food itself. There is a quality to what comes out of the Ceci kitchen that is increasingly hard to find - ingredients that taste like themselves, dishes that don’t overclaim, flavour that lands with conviction. Food, in other words, that tastes the way food is supposed to taste. It is something really special, and it deserves to be said plainly. Each morning brought something delicious and varied for breakfast - generous without being excessive. The breakfast staff were happy and kind in the way that had become familiar across the whole hotel; they added something we hadn’t anticipated: an enthusiastic daily Italian lesson, offered with encouragement and good humour. We left each morning marginally better at Italian and considerably better in spirit. Then there is Paul. What Paul is doing at Aethos Saragano goes well beyond the competent management of a hotel. He builds something - an atmosphere, a texture of communal life - that brings guests into genuine connection with each other. Meeting new people was one of the unexpected highlights of our stay, and this doesn’t happen by accident. It happens because someone has understood that hospitality, at its best, is about more than service. We visited over Easter and stayed for a week, and the weekend lunches were wonderful - generous, unhurried, celebratory. The Easter egg hunt deserves a mention of its own: eggs laid out across the grounds surrounding the pool by a certain Easter bunny (Paul!), the children each emerging triumphant with a bag full of eggs as well as an enormous Italian Easter egg of the kind that makes a child’s eyes pop. It was joyful and generous and entirely in keeping with the spirit of the place. The foraging activity with head chef Delfina was a particular highlight. She was magical with our two children: patient, happy, alive to their curiosity, and her knowledge of the land and what it offers was astonishing. Watching our children prepare foraged ingredients - wild asparagus, wild carrot, and chicoree amongst others - for a communal lunch, proud of what they’d gathered and learned, was one of those moments that had an impact. We also tried archery - genuinely, not just in the way you have a go at something and move on, but properly, with instruction, making real progress. The pool, bathed in spring sunshine, provided perfect counterpoint: still, blue, unhurried. A week also gave us time to explore the region, and Saragano makes an exceptional base for it. Perugia and Assisi are close, which we visited, Spoleto and Spello are within easy reach, and Orvieto is well worth the further drive - all these are on our itinerary for next time. Because leaving the hotel’s own surroundings requires a certain act of will. More than once we simply didn’t. We have already planned to return next Easter. The spa awaits - we were, it has to be said, having far too much fun to make a reservation this time around. We intend to return with the same spirit and slightly better planning on our side. Aethos Saragano is doing something very special.

- ami (10/5): I enjoyed every second - It’s so different in the best possible way, built as a tiny village, with tons of countryside charm but with new and slick interior in the rooms. View is to die for and food at Ceci, both breakfast and dinner, is top notch (Delfina the chef deserves every bit of credit and same goes for the staff at Ceci). Can’t wait to be back. Last thing, don’t miss out on the SPA, small but amazing and the view is stunning.
- Susanne Kuuskman (10/5): A dreamy Hotel between the Hills of Umbria - Me and my mom had a splendid time. We stayed at the apartment which was really cosy and big. They had towels, creams, everything for showering and of an amazing quality - I must say, which many times is not the case. The Stuff was super super nice. We also had dinner at their restaurant Ceci and it was DELICIOUS. They guy who served us, was so cute. The lady at the receptionist was super helpful and kind, she also suggested us whee to go to eat on our way back to Milan. The rooms were warm, the views were amazing, the breakfast was abundant and the little Borgo was a dream :) I really really would return there again. Oh and the Spa, lovely one - we were lucky enough to be the only 2 there on a Tuesday Morning. Hard to say to be honest, not much to nitpick about.

La struttura è splendida e dotata di ogni comfort. La spa è davvero unica, con una vista meravigliosa sulle colline umbre. Anche la colazione è fantastica, ricca di prodotti freschi e gustosi. Il ristorante CECI si conferma un’eccellenza assoluta. Tutto il personale è stato gentile, professionale e sempre attento alle nostre esigenze. Uno speciale ringraziamento va a Paul, che ci ha fatto sentire molto più che a casa! Non avremmo potuto desiderare di meglio per un weekend all’insegna del relax. Grazie di esistere! :)

Our room and bed weren’t serviced and made. Air conditioning was switched to winter mode, so there was no cooling option even though the weather was mid to high 20s.
- Shannon (9/5): - We stayed in the Jacuzzi Room for our honeymoon and WOW, it was truly amazing. The view was breathtaking and we loved having our private terrace. All the staff were wonderful, especially the Portuguese man who served us the majority of the trip. The food is great and we loved our cooking class with the chef. The only thing we could have wished for was somewhere to have a drink after dinner, the terrace was normally closed and with is being cold in the evenings it would have been nice if an inside bar was open.

Het is de perfecte plek om te ontspannen en te genieten van de natuur. Het restaurant was een echte aanrader – het eten was heerlijk en het personeel ontzettend vriendelijk. Zeker de troef van het verblijf! Het zwembad was ook top: schoon, ruim en lekker verfrissend. Wel zou de overdekte ruimte bij het zwembad een upgrade kunnen gebruiken. Nu is het niet verzorgd. Een groot minpunt waren de oude kamers, met name de badkamers. Deze waren echt aan vervanging toe: de badkamer was heel klein en de douchekop leek meer op een handsproeier dan een echte douchekop. Dit was een beetje een tegenvaller, vooral omdat de nieuwe kamers op de website met prachtige, moderne badkamers werden gepromoot. We hadden blijkbaar een oudere kamer met minder luxe faciliteiten, en de airco in onze kamer werkte ook niet optimaal. Al met al is dit een prima verblijf als je van natuur, rust en lekker eten houdt. Maar als je voor de moderne kamers en luxe faciliteiten komt, zou ik aanraden om goed na te vragen welke kamer je precies boekt. De vriendelijke medewerkers en het geweldige restaurant maken echter veel goed!

The room was comfortable with beautiful views, and the beds were especially cozy, making for a pleasant stay overall Unfortunately, breakfast was disappointing. My husband has a gluten intolerance, and every day we had to remind the staff to adjust the plate, which became frustrating. The standard breakfast was limited—just a croissant, jam, some bread, and yogurt with granola. On the first day we paid an extra €10 for eggs and bacon, only to receive barely a strip of bacon, which felt unreasonable. Honestly, I would have preferred no breakfast option at all. The pool area was beautiful, but it was frustrating that many guests left towels on the loungers for hours without using them. With only a few shaded beds available, this meant some guests were left sitting in the direct sun for long stretches. The property definitely did not live up to our expectations.

The staff at the hotel were lovely too. Food at the restaurant was superb, loved it! And the setting of the restaurant with views over the hills is beautiful. On occasion we waited a little too long for service at breakfast, so perhaps an extra pair of hands to help at breakfast would have helped. The set up in the rooms is also quite spartan. From an aesthetic point of view no complaints, but a chest of drawers would have been useful for clothes (especially as we were there with young children).

The hotel is in a sweet tiny village with the most gorgeous setting nestled in the peaceful hills of Umbria surrounded by vineyards and rolling hills. Bonus is the restaurant with superb food and wine and an “out of a movie” view of purple sunsets. Very convenient after touring the area. Pool also was so refreshing and surrounded by most beautiful fragrant flowers. We opted for the large apartment in the main historical house which was very roomy, great natural lighting, and had its own small balcony to star gaze at night. Huge, huge thanks to Paul, Chef Delphina, Stefania, Celeste, Luisa, and all the wonderful Aethos team. You all made us feel at home in your gorgeous home!

We booked here for the exceptional views, they didn't disappoint and you could barely hear a sound other than the sounds of nature. Our 1 bed terrace apartment was lovely, very large and well appointed with a dishwasher and Nespresso maker. The large terrace had the same stunning views. The pool was a good size and temperature, there was never a shortage of sunbeds. The restaurant provided a superb breakfast every day, and the other meals we had there were delicious. All the staff we encountered were very well trained and friendly. Paul the Manager was a very hands on presence, a lot of managers could learn from his customer service skills. There was an issue with lack of sunshades, particularly at the restaurant. Most customers wanted to sit outside on the terrace for the stunning views but there were no sunshades. These were needed even at breakfast in the June/July heat. Bizarrely there were sunshades provided on the unused terrace on the opposite side, a swap would be a good idea. We had a similar problem on our South facing terrace, maybe a roll away shade could be added here?
- traveller693789 (10/5): Stunningly beautiful hotel, built around a medieval Umbrian village - Aethos Saragano is a hotel that has been built within an Umbrian medieval village, up to 50 villagers still live there so it feels very authentic and the bells still ring from the church each day. There is a restaurant with beautiful views and excellent food. There is also a lovely pool down in the valley which was never too busy and a nearby spa. The staff we encountered were all lovely, the Manager Paul deserves a special mention as he was an incredible presence at the hotel and ran it like a tight ship, he was very helpful to us in recommending places to go and eat. We loved our stay at Aethos Saragano, it was such a beautiful place and we hope to return.

While the food was enjoyable and the staff welcoming, our overall experience at €243.60 was underwhelming. This is clearly a budget-friendly property, and we kept our expectations modest. However, several aspects were disappointing and not accurately represented online. Most notably, our apartment bathroom (not shown on the website) was in very poor condition — outdated, worn, and far below the standard suggested by the photos. This was a stark contrast to the more presentable main living area. Arrival was also a bit difficult, particularly at night. The reception is tucked away among private residential flats with minimal signage, making it confusing to locate. Additionally, the access road is in disrepair, which made reaching the property a rough and uncomfortable experience — especially for those arriving in lower-suspension vehicles. We visited while scouting potential venues for our tourism business and, unfortunately, decided to move forward on with other candidates. That said, for budget-conscious travelers seeking a quiet, remote escape and who are willing to compromise on comfort, this may still be a viable option. Just a note of caution: the website gives the impression of a more luxurious and refined experience than what is actually on offer. Travelers should adjust expectations accordingly.

The breakfast is a set menu, though orange juice and eggs are an extra charge. The quality of the room did not match the pictures. The kitchen needs to be refurbished, holes in walls need to be fixed, the tiled floor scrubbed, and the shower was unusable (in particular the shower head). We had an apartment with a kitchen; however, the kitchen didn't have the appropriate utensils to actually use it. The knife was blunt and the frying pan old and crusty. We purchased our own in the end. I think the whole property could use a handyman, gardener, and generally more staff. We loved Umbria, and really wanted to love this hotel, but sadly we won't be returning.

- tdonc8 (8/5): Beautiful location and expected - My daughter and I had 4 nights here in one of the apartments in the old building which we loved the atmosphere of. The apartment was lovely but as other reviews have covered the shower, air conditioning and some of the cabinetry needs attention. It was delightful relaxing by the pool every day, and the included breakfast was filling and good quality. We went on a wine tour down the road (walkable very easily) and had dinner at the hotel to which the winery is attached which was delicious and service excellent. While only a few hundred metres down the road, it has different views to enjoy. CICI the on-site restaurant was great too. We cooked one night and sat on the terrace with our meals (as the restaurant is closed on Mondays). Would love to come back. A few tips: - there is no hotel store so bring some provisions with you - a mudmap for parking would be helpful - Thursday nights is a BBQ meal by the pool - we weren’t there for it but sounds like a fun night
- Hugh (10/5): Four nights spent in possibly the nicest and friendliest hotel we have ever had the pleasure of experiencing. An absolu - Aethos Saragano is beautifully and sensitively integrated into the village - because it has mostly been created *from* the village. The view of the village from our room in the new building (which v handily contained the spa) was superb, as was our expansive and long view out over the countryside. The spa is quite small but perfectly formed, and the hotel limits use of the spa to only a few couples at a time - indeed on our visit we had it to ourselves. The restaurant is, again, quite small but absolutely priorities hotel guests over non-residents - allowing us to sample the delicious local cuisine as conjured up and cooked by Delphine - a girl from the village who understands what makes good local food rather magnificent - there is no need to go elsewhere to eat as many come from outside *to* the hotel to dine. Its location requires a car to get around as it is isolated, one reason we chose and enjoyed it, though not far from local villages they are not really easily walkable. Finally - the staff - led by Paul the manager. We felt that he and all of his team could not do enough for us..they treated us like house guests - they were superb. We very much enjoyed the continental breakfast, but it was basically the same every morning, and though we could add a bit of variety (such as scrambled eggs) if we so chose, the hotel charged for these little extras, and we felt that that was perhaps a little unnecessary given what we were paying for the stay. Perhaps a bit petty and minor, but being pushed to find *anything* about our stay we found less than 10/10 - that’s all we could come up with, but really it didn’t cause us any real concern.

We were given room number 9. The furnishings at Aethos are very tasteful. Big praise to the interior designers. It would have been great to see more of it in room 9. We didn’t feel the Aethos vibe in this room. To everyone - I can't really recommend this room. The layout in the room is a bit difficult as there is no space for clothes and suitcases. There is no balcony or terrace and it has no view. So avoid no. 9! It is the less attractive one comparing what you see on the website. Aethos in Seragano basically only lives from its restaurant. Everything else is rather neglected. The complex is getting on in years. You can see this especially when you look at the details. The reception looks unkempt, not tidy and the items for sale there are also carelessly curated. The outdoor area next to the restaurant is very carelessly designed. Tables are placed randomly on the terrace, no flowers on the tables, no bar, no drinks service and above all no staff to make your stay pleasant. You have to look for someone for every drink. If you are lucky the restaurant is open. Maybe we were unlucky and most of the staff was in sick leave? The restaurant is very good. The staff are more than friendly, even if they seem overwhelmed by the small number of tables and make this clear. (Should be avoided) The food is of course excellent, but the portions are unfortunately too small for the price, so you have to order more bread (extra cost) to fill up. Would be nice if there were normal portions. It is interesting that the staff in the restaurant wear a very tasteful uniform. Unfortunately, the rest of the staff do not. Again, please don't misunderstand, but the promise that Aethos makes on its website is a different one. A certain luxury requires a certain elitism, unfortunately there is no other way nowadays. The path to the pool is unkempt. The pool house is dirty, the furniture in it is broken, the gym equipment is dirty and pushed into the corner. More like a storeroom.

The toilet facilities are extremely unkempt. The showers in particular are not in good condition. You would like the same standard here as in your room with the same products and above all fresh towels. The same applies to the outside shower. Run down and unkempt. Perhaps less budget should be invested in the Aethos magazines and internet presence and more in the staff, external equipment and love to details. At least here in Seragano. Nevertheless, we had a good rest and hope that all other Aethos spots keep their promise better than the one in Seragano.
- lileeewhoo (10/5): Nice stay - Our experience started off rocky due to some communication issues, once we were on-property our stay was quite nice and memorable. The food is top-notch - Chef Delphina deserves high praise. Some of the best pasta and meats we had while in Italy happened here. Everything we had tasted homemade, home grown, and super fresh. The breakfast was nice though we got sick of it quickly, as it was essentially the same thing daily with a couple slight modifications. We had an issue in our room where the AC was just not cooling. The room we were moved to cooled but still not enough - maybe our American preference! We stayed in one of the modern rooms, which was nice to be able to experience Umbria but still stay in a newer room. Bathrooms are equipped with a variety of amenities. We also experienced the Spa circuit while we were there. The offerings/ facilities are very nice and they limit the number of people each session. However, the jacuzzi water was nowhere near hot enough. The staff was very friendly, and Paul was incredibly helpful with recommendations in the area.

They know very well that the magnificence of nature cannot be rushed, so every experience is seasonal, spontaneous, delightfully impromptu. If, for example, you find yourself there on Easter Saturday, as we did, you’ll be invited to join a morning foraging out on the hills to hunt fresh wild asparagus and herbs to go with for lunch. Paul, the most charming of hosts, accompanies you in impeccable style with matching gloves and secateurs but also not afraid to dirty his Barbour ensemble to help you reach the most beautiful wild orchid up that little hill over there. Between a steep downhill path and a shortcut through the dandelions he tells you the story of how this place has become a special retreat away from fast modern life, coming to life in ancient stone and mindful of the frank, unfiltered character of the Umbria region. Back in the kitchen, the brilliant chef Delfina will teach you the secrets of perfect cooking - just enough, never too much - with a drizzle of local olive oil. If you really don't feel adventurous you can just be lazy and have the most delicious breakfast (it's momentous and they will accomodate any dietary preference including freshly made vegan options that taste incredible) and then melt into a private spa session that feels like being hugged by a cloud. I recommend coming to Saragano by car because there's so much to explore around, but you can always lounge guilt-free for a couple days by the property and heal your stressed soul. There's so many beautiful spots, between the quaint stone-wall houses with flowers on the balcony, the sunkissed terrace to sip red wine in while looking at green hills that look straight out of a Corot painting, and (my personal favorite) the in-room jacuzzi with a view so poetic it made me question every life choice that didn’t involve moving to Umbria forever. That being said, I am sorry but I do have a complaint with a receptionist. Name's Mabel. She’s very pretty and apparently she knows. The attitude! Struts around like she owns the place. Black, compact, and devastatingly cute, with a squishy little face. And don’t get me started on her stunning little sister... Who do they think they are? Just because you’re the prettiest dogs ever... Anyway. Would I stay again? Yes. Would I accept being silently judged by a couple of French bulldogs in matching pink harnesses? Also yes.

They have a wide choice of activities that we were all able to do together , like cooking classes, foraging, arching, and wine tasting. A super friendly staff that makes you feel like home. The decor in the rooms could have been improved on. Just needs a designers eye to sweep over and make a few improvements for comfort and an aesthetic X factor.
- siobahnp2019 (10/5): An unforgettable experience. - We stayed at Aethos Saragano a week in the lead up to our wedding in Umbria. The entire setting for the hotel is magical, the views are absolutely stunning and the terrace area for dinner, over looking the rolling hills at sun set was just an absolute dream! Communication from the reception was great- they whatsapped us ahead of arrival to check what time we would arrive and gave us plenty of information regarding parking and the restaurant and pool accessibility. We can’t fault the service in any way. The restaurant staff and the house keeping staff were just wonderfully friendly and helpful. We loved that the restaurant had set times for lunch and dinner, it was nice to have this routine during our week stay here and the food was faultless… one of the most incredible meals we have ever experienced was when we ate here for dinner on our first night. The pool area is lovely and relaxing. Yes, a lot of mosquitos but that can’t be helped, just be prepared! The pool was a great way to cool off and relax. We often felt like we had it to ourselves which was lovely. We thoroughly enjoyed our stay here and highly recommend it to anyone wanting a relaxing break from the hectic reality of life… just come here and switch off. It will be worth it!

- AbbyChicago77 (8/5): A few tweaks to go from good to great - This hotel has the best views, and food, I’ve ever experienced! Magical. That said, I do think a few tweaks would help it go from good to great. Arrival — We arrived around 8pm and had zero greeting or welcome or communication about where to park, or how to handle our bags, or even if we were in the right place! It’s not intuitive, so we got screamed at in Italian by a local for (apparently) parking in his spot rather than the hotel parking lot at the bottom of the hill. Whoops. Eventually we found a manager (Deborah, delightful) in the restaurant and she helped us get settled. But arrival was a bit jarring. We are still quite unsure of the whole relationship between the hotel buildings and local residences, which all apparently blend together somehow? Amenities — the “wine bar” and “library” looked cute but were closed (as was the restaurant sometimes), so unless you have space in your room, just be aware there’s zero place to meet, or get together, or have a drink or a snack. There’s no bar at the restaurant, for instance. Rooms — lots of potential here! Beds VERY comfy. While the photos appear very luxurious (huge kudos to the hotel photographer), the rooms are actually quite sparse and rustic. Spa — we got massages and while there’s typically someplace to wait in a spa before your service, not the case here. So no need to show up early, and nowhere to sit before or after. I believe you can pay extra to lounge around, but very limited capacity; so we were not allowed. Food — FANTASTIC; as were our servers. Breakfast and dinners were all exceptional! Driving — super fun and easy as long as you love winding climbing hilly roads! Note the parking lot is a few minutes walk down a hill, which is not a big deal once you know where you’re going. All in all this hotel has tons of potential, and I hope to return someday, if only for the breathtaking views from the terrace.

- 472janines (10/5): Amazing experience with incredible customer service - Where to start… my husband and I stayed at Saragano Aethos for two nights. Since arrival were were greeted by a warm welcome from Paul. He took the time to talk to us and explain in detail everything about the resort. He is fantastic in every way, the heart and soul of Aethos Saragano. He and Delfina made us feel at home and Delfina is an amazing cook. Food at the Ceci restaurant was always perfect and delicious . We loved our stay, the views, the food but mostly Paul and Delfina. Amazing views and charming set up.
- 38elliot (6/5): Pretty but not perfect - The hotel is situated amongst a really sweet, small Italian village. Our room was lovely - modern and clean with amazing views and the breakfast we had was also great. We were however a bit disappointed to find out that the restaurant was closed on Mondays (and there is nowhere else in walking distance) which we thought should have been made more clear upon booking. The staff were however very helpful in saving us some food from their lunchtime service. The only other thing we were disappointed with was the pool - despite it's lovely setting it was full of locals (a family of around 15 people) which coupled with the overwhelming amount of mosquitos, made it less relaxing than we had hoped. I would go back but think there could be some improvements or better communication.
- Siobahn (9/5): Aethos- a good place to encourage a slower pace of living. - Stunning location. Magical views. Rooms spotlessly clean and contemporary and stylish. We LOVED that there was no TV in our room… the vibes at Aethos encouraged you to slow down and relax, which is what we needed. The staff were faultless. Friendly, kind, approachable, nothing was too much trouble. The staff always wanted to help us when needed. The restaurant was so special. Eating on the terrace, the views, the thunder behind my partners head! Like a fairytale. It’s not that we didn’t like this, we feel there could be a small bar/ snack bar down by the pool. Every part of the hotel was so well thought out, however we felt the room where you get your drinks from the little fridge could be elevated to match the aesthetic of the rest of the hotel.
- Brittany (10/5): The best hotel in Italy. - This property is incredible. The staff, the facilities, the food, the pool and the spa are just 10/10. We were so sad to leave, and think it’s wrecked other places in Italy for us as it was so perfect! You have everything you need at your disposal, and the food for breakfast, lunch & dinner is beyond amazing. Could not recommend this place enough. That we couldn’t stay longer!!!
