- Tiffany (10/5): - Th property was gorgeous. Everything from The layout to the tranquil ponds and plants and the room design evoke luxury and relaxation. The staff for the most part were excellent. There was one rude lady checking us in for breakfast who chastised me for not speaking French. I hadn't spoken French in many years and had brushed up on some basic phrases, but she was speaking very fast and I couldn't understand her so I asked if she spoke English (all the other staff members did and were polite about it). She proceeded to lecture me and my husband about visiting a country and not speaking the language. Normally I would have given the attitude right back, but I didn't want anyone tampering with my food, and my 3 year old was already getting fussy. That was very inappropriate of the staffer. However, other than that it was a great experience.

- Paul (8/5): Luxurious accommodation - Exceptional accommodation, very slick and ultra modern, perhaps out of character for a vineyard district. Wonderful service staff however hotel is quite unconnected with food and beverage operators so between having to dine offsite and disappointing experience when a table became available, I suggest using this hotel only for luxurious bedding.
- Allan (10/5): - The hotel was converted from an old distillery. Everything looks and feels ultra modern; if you like ultra modern, then it's good. Because of the conversion, things seem spread out. It took us a little effort to find the restaurants. The restaurant has a Michelin star and is good. The brasserie is great. Also, plenty of parking space.

We also couldn’t get into any of the hotel restaurants during our stay so was only offered ‘room service’ that ended at 10pm, so had to find external options - very disappointing as a paying guest of the hotel.

- AISLING (8/5): Beautiful but with some issues. - The hotel is very beautiful but we experienced a few issues with the service in the Distillery dining room. We mentioned these issues to reception on checkout and they seemed to take them seriously. The breakfast buffet was also confusing as they have 2 options (€18 and €35) but both are in the same area - which must be impossible to manage (in fact we were charged for the full €35 when we had actually stuck to the €18 option). This is frustrating as a 5 star hotel of this calibre should be able to manage things like this seamlessly. I was also disappointed to see miniature toiletries in the bathroom - as we all move to a more sustainable economy I would prefer to see full size shower gels etc mounted in the shower instead of tiny disposable ones.

- Mike (10/5): - Fantastic, unique property. The ambience was very relaxed and friendly. The rooms were huge and beautifully appointed. The use of an old cognac distillery, blended with the modern refurbishment, made for a truly unique hotel.
- etienne (10/5): un très bel établissement - sejour à deux, l'hôtel est très confortable et bien insonorisé quelques points de progrès concernent le petit déjeuner (service très lent,oeufs brouillés en tube, choix de pain limité, pas de plats chauds à la commande) un peu limite pour cette catégorie d'hôtel et le process d'accueil, car attendre avec une verre d'eau en carton dans le hall c'est pas du tout ce à quoi on s'attend en entrant ...

- Natalie (10/5): Relaxing stay! - Lovely hotel in beautiful setting. Bedroom with terrace was very clean , comfortable and had everything we needed. We used rooftop bar .. expensive drinks and we got charged an extra drink by mistake… wouldn’t normally have worried about this if they’d just reimbursed straight away when I raised the issue but it seemed to be a real song and dance a in the end as they couldn’t seem to credit my card back just gave me cash…. This wasted some time on our leaving day when we just wanted to get by outside pool! Otherwise restaurants are also good… just seem to be very expensive wine! Great facilities onsite too with inside/outdoor pool plus the spa for treatments. Good stay overall.
- Claire (8/5): A luxury break in Cognac. - A beautiful new hotel in Cognac. It’s really close to the town centre so great for getting around. They have done a wonderful job of creating a hotel from an old distillery. The staff are lovely and can’t do enough to help. The pool is also great. It’s a half in and half out with a small garden outside for relaxing. We were lucky enough to get a room upgrade and this had its own little garden. There are two restaurants and two bars at the hotel (although the Cognac bar is closed until September this year) If there are a couple of areas of improvement I would say breakfast is a bit haphazard. They got our order wrong a couple of days and we were left for a long time without food (one day they forgot us entirely) Also there is no food or drink served by the pool. Some days they had water down there but it would have been nice for some service to make the experience even better.
- Sue (10/5): Cognac Gem - Stunning makeover of buildings with imaginative modern architectural additions linking the buildings. The evening restaurant food was a triumph but the breakfast menu needs attention. My only niggle was no mirror in the separate toilet and lack of a handy power point outside the bathroom door to allow use of a hairdryer in front of the bathroom mirror.

- Laura (10/5): Great stay - We stayed for one night in cognac and this hotel was every bit luxury. We were upgraded into one of their suites which was absolutely stunning. This is such a beautiful hotel, with great amenities and amazing staff.

The location is amazing in the middle of the old town of cognac. Mixing old architecture with new buildings. The amenities are real 5* The rooms a beautiful and very confortable. I would recommend a 2/3 nights stay The only point of our stay was the service at the restaurant, really labourious and slow. Congratulations to the people who made this location possible I really loved the roof terrace with nice sound (electronic deep house) and amazing views. People here are amazing

- Jason A (10/5): Royal stay at the Chais Monnet! - Hotel Chais monnet was beyond superb. We stayed in a standard room. It was huge! We saved up our Hotels.com and redeemed our free hotel night stay here. It cost us about $70 after redemption "maybe a bit more I can't remember". The hotel staff were very nice and went out of their way to help us. Our train arriving in Cognac was running late and we had arranged to pay for the hotel car to pick us up at the train station to bring us to the royal castle cognac tour. I called them from the train and told them we were running late and they informed the driver and it was no problem. They dropped us off at the tour and brought our luggage to our room. Granted it wasnt far to the castle or hotel but it was the service that stood out nonetheless! If you are ever in Cognac and can stay here you must! Even the standard room made us feel as if we were royalty.
